Pork and the search for perfection

Hello all from the land of pork. So we settled a coulple of days ago. We were basically given a mud plot to construct our porky palace on. The team worked furiously to put down flooring, set up the smoker, decorate the tent with craft themed items-even the master of disaster Lauren built a edison bulb get up to hang over our table. Covered in mud< smelling like dirty socks and too many chefs under one tent we locked it down. Lots of memphisits have stopped by just to say “New York City” and the move on. Others say “you boys got alot of balls comin down here” .  Anyway, our smoker smell of pork deliciousness so they can suck an egg. For the first two days we have been testing and tweaking recipes. Chris Lily and one of his guys Ken has played a major roll as a mentor for us. they have tasted through everything with us and critiqued all. So we are moving in the right direction.
